Potato and Carrot Herb Pancake
A golden and crispy pancake made from grated potatoes, carrots and fresh herbs. Serve with a salad for a complete meal.

Ingredients
- 700 g Potatoes
- 300 g Carrots
- 2 tbsp Fresh herbs (parsley, thyme)
- 1 piece Egg
- 3 tbsp Rice flour
- 4 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Finely grate the potatoes and carrots, then squeeze with a clean towel to remove excess water.
Step 2
Mix the grated vegetables, egg, rice flour and fresh herbs. Season with salt and pepper.
Step 3
Heat the oil in a large skillet over medium-high heat.
Step 4
Form a pancake by pouring the mixture into the pan and flattening with a spatula. Cook for 12-15 minutes until golden.
Step 5
Carefully flip and cook the other side for 10-12 minutes until crispy.
