Thai Shrimp and Broccoli Frittata

Ingredients
- 6 piece Eggs
- 150 g Shrimp, peeled
- 150 g Broccoli
- 1 medium Red bell pepper
- 4 tbsp Coconut milk
- 1 stalk Lemongrass
- 1 tbsp Fish sauce
Instructions
Step 1
Separate the broccoli into small florets, dice the bell pepper. Mince the lemongrass finely.
Step 2
Sauté the broccoli and bell pepper in an oiled pan for 5 minutes over medium heat.
Step 3
Whisk the eggs with the coconut milk, lemongrass, and fish sauce. Add the shrimp.
Step 4
Pour the mixture over the vegetables, cover, and cook for 10 minutes on low heat until the frittata is set.
