Grilled Frittata with Bell Peppers, Feta and Mint
A thick frittata made with roasted bell peppers and crumbled feta, infused with fresh mint and finished under the broiler until golden. A Turkish-inspired dish that's perfect for a complete meal.

Ingredients
- 5 piece eggs
- 1 piece red bell pepper
- 1 piece yellow bell pepper
- 80 g feta
- 10 leaf fresh mint
- 1 tbsp olive oil
Instructions
Step 1
Dice the bell peppers. Roast them in an oven-safe skillet with olive oil for 5 minutes.
Step 2
Beat the eggs with salt and pepper. Chop the mint.
Step 3
Pour the beaten eggs over the peppers in the skillet. Crumble the feta on top and sprinkle with mint. Cook over medium heat for 8 minutes.
Step 4
Place the skillet under the broiler for 4-5 minutes until the top is golden and puffed. Serve warm.
