Turkey Frittata with Peppers and Zucchini

Ingredients
- 5 piece eggs
- 150 g ground turkey
- 1 piece red bell pepper
- 1 piece zucchini
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 pinch salt and pepper
Instructions
Step 1
Preheat the broiler. Dice the bell pepper and slice the zucchini into half-moons.
Step 2
Heat the oil in an oven-safe skillet. Brown the ground turkey for 4 minutes, breaking it apart as it cooks, then add the vegetables and cook for 3 minutes.
Step 3
Beat the eggs with the oregano, salt, and pepper. Pour over the meat and vegetables, and cook over low heat for 5 minutes.
Step 4
Place under the broiler for 3 to 4 minutes until the top is golden and set. Let rest for 2 minutes before slicing.
