Mushroom and Fresh Goat Cheese Frittata

- 6 pieces eggs
- 200 g button mushrooms
- 1 piece onion
- 80 g fresh goat cheese
- 2 sprigs fresh thyme
- 1 tbsp olive oil
Instructions
Step 1
Slice the mushrooms and onion. Beat the eggs with salt and pepper.
Step 2
Heat the olive oil in an oven-safe skillet. Sauté the onion and mushrooms for 5 minutes over medium heat with the thyme leaves.
Step 3
Pour the beaten eggs over the vegetables. Crumble the fresh goat cheese on top. Cook for 5 minutes over low heat.
Step 4
Place the skillet under the broiler for 3-4 minutes until the surface is golden and puffed. Serve in portions.
