Squid and Zucchini Frittata
A golden frittata with tender squid rings and tender zucchini, enhanced with garlic and parsley. A simple and delicious Italian dish.

Ingredients
- 5 pieces eggs
- 200 g squid rings
- 2 pieces zucchini
- 80 g cherry tomatoes
- 2 cloves garlic
- 1 tbsp olive oil
- 1 bunch fresh parsley
Instructions
Step 1
Slice the zucchini into thin rounds and halve the cherry tomatoes. Mince the garlic.
Step 2
Heat the olive oil in an oven-safe skillet. Sauté the squid and garlic for 3 minutes.
Step 3
Add the zucchini and tomatoes, cook for 3 minutes.
Step 4
Beat the eggs with chopped parsley, pour into the skillet. Cook for 5 minutes over low heat, then 4 minutes under the oven broiler until golden.
