Homemade Fries and Carrot Compote

Ingredients
- 600 g Potatoes
- 400 g Carrots
- 30 g Sugar
- 500 ml Oil
- 5 g Salt
- 1 g Pepper
Instructions
Step 1
Peel the potatoes and cut them into sticks.
Step 2
Soak the fries in cold water for 5 minutes to remove the starch.
Step 3
Dry the fries with paper towels.
Step 4
Peel and cut the carrots into small cubes.
Step 5
Cook the carrots in a skillet with sugar until caramelized.
Step 6
Heat the oil to 170°C and fry the fries in batches.
Step 7
Salt the fries and serve with the hot compote.
