Roasted Halibut with Fennel and Candied Tomatoes
Thick halibut fillets roasted in the oven with caramelized fennel and candied tomatoes, a refined recipe with Greek inspiration.

Ingredients
- 2 piece halibut fillet
- 2 bulbs fennel
- 80 g candied tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 pinch salt and pepper
Instructions
Step 1
Preheat the oven to 200°C. Slice the fennel into 1 cm thick slices.
Step 2
Arrange the fennel on a baking sheet, drizzle with olive oil, sprinkle with oregano, season with salt and pepper. Bake for 12 minutes.
Step 3
Add the candied tomatoes and place the halibut fillets on top of the vegetables. Return to the oven for 10 minutes until fully cooked.
Step 4
Serve directly from the baking sheet with the cooking juices.
