Pork Tenderloin with Spinach and Mushrooms
A tender pork tenderloin roasted in the oven with fresh spinach and mushrooms. An elegant and light dish, ready in 30 minutes.

Ingredients
- 400 g Pork tenderloin
- 200 g Spinach leaves
- 200 g Button mushrooms
- 1 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 pinch Salt and pepper
Instructions
Step 1
Preheat the oven to 200°C. Rub the pork tenderloin with smoked paprika, salt, and pepper.
Step 2
Cut the mushrooms into quarters. Arrange them on the baking sheet with olive oil.
Step 3
Place the pork tenderloin on the baking sheet among the mushrooms. Bake for 18 minutes.
Step 4
Add the spinach to the baking sheet and bake for an additional 4 minutes. Slice the pork tenderloin and serve.
