Grilled Sole Fillets with Mushrooms and Spinach
Delicately grilled sole fillets with golden button mushrooms and tender spinach. A light and refined dish.

Ingredients
- 4 piece sole fillet
- 200 g button mushrooms
- 150 g fresh spinach
- 20 g butter
- 1 piece shallot
- 4 sprig flat parsley
Instructions
Step 1
Slice the mushrooms and shallot. Wash the spinach.
Step 2
Grill the sole fillets 3 minutes per side with a drizzle of oil, season with salt and pepper.
Step 3
Sauté the mushrooms and shallot in butter for 4 minutes, add the spinach and cook for 2 minutes.
Step 4
Plate the fillets over the vegetables and sprinkle with chopped parsley.
