Brazilian Feijoada
Brazil's national dish: a hearty stew of black beans and assorted meats, slow-cooked to develop deep, comforting flavors.
Ingredients
- 400 g Dried black beans
- 300 g Pork breast
- 300 g Pork ribs
- 150 g Pork tongue
- 2 piece Onion
- 6 clove Garlic
- 2 piece Tomato
- 1 piece Red bell pepper
- 1.5 L Beef broth
- 2 piece Bay leaf
- 2 piece Fresh malagueta chili
- 60 ml Olive oil
- au goût Salt and pepper
- 400 g White rice
Instructions
Step 1
Soak the black beans overnight or use canned beans that are well rinsed.
Step 2
Boil water with the meats and bay leaves for 20 minutes, then drain and reserve.
Step 3
Mince onions and garlic, cut tomatoes and bell pepper into dice.
Step 4
Heat the olive oil and sauté onions and garlic for 3 minutes.
Step 5
Add tomatoes and bell pepper, cook for 5 minutes.
Step 6
Stir in beans, cooked meats, broth, and whole chili peppers.
Step 7
Simmer on low heat for 60 minutes until the meat is very tender.
Step 8
Season generously. Serve over white rice with orange wedges on the side.
