Green Enchiladas with Shrimp
Corn tortillas rolled with shrimp in a creamy green tomatillo sauce, an authentic Mexican recipe.

Ingredients
- 350 g Shrimp
- 9 piece Corn tortillas
- 400 g Tomatillos
- 150 ml Sour cream
- 1 piece White onion
- 20 g Fresh cilantro
- 2 piece Jalapeño pepper
- 2 clove Garlic
- 150 g Fresh cheese
- 2 tbsp Olive oil
- 5 g Salt
- 1 piece Lime
Instructions
Step 1
Prepare the sauce: blend the raw tomatillos, jalapeños, white onion, cilantro and garlic.
Step 2
Heat the oil in a pot, pour in the blended sauce and cook for 5 minutes. Add sour cream and salt.
Step 3
Cook the shrimp in a pan for 4 minutes. Squeeze lime juice and season.
Step 4
Dip each tortilla in the green sauce, fill with shrimp and fresh cheese.
Step 5
Roll and place in a buttered dish, cover with remaining green sauce.
Step 6
Bake at 180°C for 12 minutes. Serve hot.
