Roasted Pork Loin with Brussels Sprouts and Onions

- 400 g pork loin
- 250 g Brussels sprouts
- 1 piece red onion
- 2 tbsp whole grain mustard
- 1 tbsp olive oil
- 1 pinch salt and pepper
Instructions
Step 1
Preheat the oven to 210°C. Cut the Brussels sprouts in half and the onion into quarters.

Brush the pork loin with whole grain mustard. Season with salt and pepper.
Step 3
Arrange the vegetables on the baking sheet with olive oil. Place the pork in the center.
Step 4
Roast for 25 minutes until the pork is golden and the Brussels sprouts are caramelized. Let rest for 3 minutes before slicing.
