Doro Wot (Ethiopian Lamb Stew)
A rich and spiced stew featuring lamb, hard-boiled eggs, caramelized onions, and a sauce of Ethiopian spices. A classic of Ethiopian cuisine.

Ingredients
- 800 g Lamb (neck)
- 4 piece Eggs
- 600 g Onions
- 4 clove Garlic
- 3 cm Fresh ginger
- 2 tsp Espelette pepper
- 1 tsp Fenugreek
- 1 tsp Ground coriander
- 400 ml Beef broth
- 5 tbsp Vegetable oil
Instructions
Step 1
Cook the eggs for 10 minutes, shell them, and set aside.
Step 2
Cut the lamb into 3cm cubes.
Step 3
Slice the onions and cook them for 15 minutes over medium-high heat in the oil until caramelized.
Step 4
Add chopped garlic and ginger, cook for 2 minutes.
Step 5
Add the lamb and spices, stir well, and cook for 5 minutes.
Step 6
Pour in the broth, cover, and simmer for 25-30 minutes until tender.
Step 7
Add the eggs at the end of cooking and let sit for 2 minutes.
