Shrimp and Egg Donburi
A bowl of rice topped with sautéed shrimp, a runny egg, and fresh vegetables, all drizzled with a savory-sweet Japanese sauce.
Ingredients
- 300 g cooked white rice
- 250 g peeled shrimp
- 2 piece eggs
- 100 g broccoli
- 50 g carrot
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1 tsp sugar
- 10 g fresh ginger
- 2 tbsp neutral oil
Instructions
Step 1
Prepare the rice and let it cool to room temperature if needed.
Step 2
Cut the vegetables into small dice.
Step 3
Bring a pot of water to a boil for the eggs.
Step 4
Heat the oil in a pan and stir-fry the shrimp with ginger for 3 minutes.
Step 5
Add the vegetables and stir-fry for an additional 2 minutes.
Step 6
Prepare the sauce by mixing soy sauce, mirin, and sugar. Pour it over the shrimp and vegetables.
Step 7
Cook the eggs soft-boiled (6 minutes) or poached according to preference.
Step 8
Divide the rice among bowls, top with the shrimp and vegetable mixture, and place the egg on top.
