Spiced Red Lentil Dhal
A flavorful and nourishing Indian vegetarian dish made with red lentils cooked with onions, tomatoes, spices and coconut milk for a creamy sauce.
Ingredients
- 200 g Red lentils
- 1 piece Onion
- 250 g Tomatoes
- 3 clove Garlic
- 15 g Fresh ginger
- 200 ml Coconut milk
- 1 tsp Cumin
- 0.5 tsp Ground coriander
- 0.5 tsp Turmeric
- 0.25 tsp Cayenne pepper
- 2 tbsp Coconut oil
- 10 g Cilantro leaves
- 500 ml Water
Instructions
Step 1
Rinse the red lentils under cold water.
Step 2
Mince the garlic and ginger, slice the onion, and crush the tomatoes.
Step 3
Heat the coconut oil and sauté the onion for 3 minutes.
Step 4
Add the garlic and ginger, cook for 1 minute.
Step 5
Add the spices (cumin, coriander, turmeric, and cayenne), stir for 1 minute.
Step 6
Add the lentils, tomatoes, and water. Bring to a boil then simmer for 20 minutes until the lentils are tender.
Step 7
Pour in the coconut milk and stir. Cook for 2 minutes without boiling.
Step 8
Garnish with fresh cilantro leaves before serving.
