Caribbean Red Lentil Dahl
A hearty lentil soup with coconut, curry spices and vegetables. A filling vegetarian dish typical of Caribbean cuisine.

Ingredients
- 250 g Red coral lentils
- 200 ml Coconut milk
- 1 piece White onion
- 3 clove Garlic
- 20 g Fresh ginger
- 2 piece Tomato
- 150 g Spinach
- 20 ml Coconut oil
- 8 g Curry powder
- 600 ml Vegetable broth
- 5 g Salt
Instructions
Step 1
Finely mince the onion, garlic and ginger.
Step 2
Heat the coconut oil and sauté the onion, garlic and ginger.
Step 3
Add curry powder and cook for 1 minute.
Step 4
Pour in the lentils, tomato and broth.
Step 5
Bring to a boil and cook for 20 minutes.
Step 6
Add coconut milk and spinach, cook for 3 minutes.
Step 7
Season to taste and serve hot.
