Quick Vegetarian Tomato Curry
A mild and flavorful curry combining everyday vegetables, tomato sauce, and spices. Served with rice or pasta, it's a comforting and aromatic dish.

Ingredients
- 3 pieces Tomato
- 3 stalks Celery stalk
- 200 ml Tomato sauce
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 200 ml Coconut milk
- 1 piece Onion
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Slice the onion into thin strips. Cut the celery into chunks and dice the tomatoes.
Step 2
Heat the oil in a wok or large pot over medium heat and sauté the onion for 2 minutes.
Step 3
Add the curry powder and mix well to infuse the oil (30 seconds).
Step 4
Add the celery, diced tomatoes, tomato sauce, and coconut milk. Stir well.
Step 5
Simmer over medium-low heat for 15 minutes, stirring occasionally.
Step 6
Season with salt and pepper, and serve hot with rice or pasta.
