Quick Vegetarian Chickpea Curry
A light and flavorful Indian curry with chickpeas, coconut milk, and spices. Served with rice or semolina for a complete meal.

Ingredients
- 150 g Semolina
- 400 g Canned chickpeas
- 200 ml Coconut milk
- 1 piece Onion
- 2 tsp Curry powder
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the semolina according to package instructions.
Step 2
Finely mince the onion.
Step 3
Sauté the onion in oil in a pan for 2 minutes.
Step 4
Add the curry powder and mix well for 1 minute.
Step 5
Pour in the coconut milk and chickpeas, simmer for 10 minutes.
Step 6
Season with salt and pepper. Serve over the semolina.
