Express Vegetarian Curry with Pasta
A mild and flavorful curry with pasta, coconut milk and vegetables. A comforting dish inspired by Asian cuisine.

Ingredients
- 250 g Pasta
- 400 ml Coconut milk
- 2 tbsp Curry paste
- 1 piece Bell peppers
- 1 piece Onions
- 2 clove Garlic
- 2 tbsp Olive oil
- 50 g Grated Gruyère
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Bring salted water to a boil and cook the pasta according to package instructions.
Step 2
Meanwhile, chop the onion and garlic and cut the bell pepper into small dice.
Step 3
Heat the oil in a pan and add the onion and garlic.
Step 4
Add the curry paste and mix well for 1 minute.
Step 5
Add the bell pepper dice and pour in the coconut milk, simmer for 5 minutes.
Step 6
Drain the pasta and add it to the curry sauce, mix well.
Step 7
Season with salt and pepper, serve on plates with a little grated Gruyère on top.
