Vegetarian Curry with Carrots and Oats
A simple and comforting Indian curry enriched with oats for added texture. A flavorful and hearty dish.

Ingredients
- 300 g Carrots
- 200 ml Sour cream
- 100 g Oat flakes
- 300 ml Water
- 1 tbsp Oil
- 2 tsp Curry powder
- à volonté pinch Salt
- à volonté pinch Pepper
Instructions
Step 1
Slice the carrots into rounds.
Step 2
Heat the oil in a Dutch oven and add the curry. Let it infuse for 1 minute.
Step 3
Add the carrots and oat flakes. Mix well.
Step 4
Pour in the water and sour cream. Bring to a boil then reduce heat.
Step 5
Simmer for 15-20 minutes until carrots are tender. Season with salt and pepper.
