Vegetarian Curry with Semolina
A simplified Indian curry with fresh vegetables, served over fluffy semolina. Flavorful and exotic, yet very easy to prepare.

Ingredients
- 200 g Semolina
- 3 piece Tomatoes
- 100 g Celery
- 1 piece Avocados
- 3 tbsp Olive oil
- 400 ml Water
- 2 tsp Curry powder
- 200 ml Coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Bring salted water to a boil for the semolina.
Step 2
Sprinkle the semolina into the boiling water, stir and let rest for 5 minutes.
Step 3
Meanwhile, crush the tomatoes and mince the celery.
Step 4
Sauté the celery in olive oil in a Dutch oven, add the curry powder.
Step 5
Add the tomatoes and coconut milk, let simmer for 10 minutes.
Step 6
Dice the avocado and add at the end of cooking, season and serve over semolina.
