Thai Red Curry Chicken with Coconut (served with rice)
A rich and flavorful curry combining chicken, coconut milk and red curry paste for an explosion of Asian flavors. Served with white rice.

Ingredients
- 600 g Chicken
- 400 ml Coconut milk
- 3 tbsp Red curry paste
- 250 g White rice
- 2 unités Onion
- 2 tbsp Oil
- 500 ml Water
- 1 tsp Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions (approximately 18 minutes).
Step 2
Cut the chicken into 3 cm cubes. Thinly slice the onions.
Step 3
Heat the oil in a wok or large pot. Sauté the onion for 2 minutes.
Step 4
Add the curry paste and cook for 1-2 minutes to release the aromas.
Step 5
Add the chicken cubes and sear for 3-4 minutes.
Step 6
Pour in the coconut milk, season with salt and pepper. Simmer for 15 minutes over medium heat.
Step 7
Serve the curry over hot white rice.
