Thai Chicken Curry with Penne
A delicious Thai curry with chicken thighs and penne, made with coconut milk and spices. An exotic and satisfying dish that's anything but ordinary.

Ingredients
- 400 g Chicken thighs
- 200 g Penne
- 200 ml Coconut milk
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Red curry powder
- 1 tbsp Soy sauce
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
- 1.5 l Water
Instructions
Step 1
Bring salted water to boil and cook the penne according to package instructions.
Step 2
Meanwhile, cut the chicken into pieces, mince the onion and garlic.
Step 3
Heat the oil in a large pot or deep skillet.
Step 4
Sauté the onion and garlic for 2 minutes, then add the chicken.
Step 5
Sprinkle with curry powder and stir well for 1 minute.
Step 6
Pour in the coconut milk and soy sauce, then simmer for 15 minutes.
Step 7
Drain the pasta and mix it with the curry, season to taste.
