Thai Curry with Potatoes and Carrots

Ingredients
- 600 g Potatoes
- 400 g Carrot
- 400 ml Coconut milk
- 30 g Red curry paste
- 150 g Onion
- 15 g Garlic
- 10 g Fresh ginger
- 30 ml Oil
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut potatoes and carrots into cubes, mince the onion, and chop the garlic and ginger.
Step 2
Heat the oil in the pan and sauté the onion, garlic, and ginger for 3 minutes.

Add the curry paste and cook for 2 minutes while stirring.
Step 4
Add the potatoes and carrots, mix well for 2 minutes.
Step 5
Pour in the coconut milk, season with salt and pepper, and simmer for 20-25 minutes until tender.

Serve hot with white or brown rice.
