Thai Chicken and Vegetable Curry
A homemade Thai curry with coconut milk, tender chicken, and crisp vegetables. Served over white rice, it's a culinary journey in 35 minutes.
Ingredients
- 400 g Chicken
- 200 g Broccoli
- 150 g Carrots
- 3 tsp Curry
- 400 ml Coconut milk
- 2 tbsp Oil
- à volonté Salt
- 250 g White rice
- 500 ml Water
Instructions
Step 1
Start cooking the rice in a pot with salted water according to package directions.
Step 2
Cut the chicken into cubes and the carrots into sticks. Divide the broccoli into small florets.
Step 3
Heat the oil in a pan and add the curry. Cook for 1 minute to release the aromas.
Step 4
Add the chicken cubes and brown them for 5 minutes, stirring.
Step 5
Pour in the coconut milk, then add the carrots and broccoli. Season with salt and simmer for 10 minutes until the vegetables are tender and the chicken is cooked through.
Step 6
Serve the curry over white rice.
