Thai Curry with Cauliflower and Coconut Shrimp
An authentic Asian curry featuring cauliflower and shrimp bathed in a spiced and savory coconut milk sauce. Served over rice.

Ingredients
- 400 g Cauliflower
- 400 ml Coconut milk
- 300 g Shrimp
- 2 tbsp Red curry paste
- 1 piece Fresh ginger
- 1 medium Red onions
- 200 g White rice
- 2 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice in a pot according to package instructions.
Step 2
Cut the cauliflower into florets and dice the onion.
Step 3
Sauté the curry paste in oil in a pan for 2 minutes.
Step 4
Add the cauliflower and onion, cook for 5 minutes.
Step 5
Pour in the coconut milk and let simmer for 8 minutes.
Step 6
Add the shrimp and cook for 3-4 minutes until done.
Step 7
Season with salt and pepper, and serve over rice.
