Thai Curry with Vegetables and Chicken
Authentic homemade Asian curry with coconut milk, tender vegetables, and flavorful chicken. Served over white rice, it's an everyday classic with an exciting twist.

Ingredients
- 500 g Chicken
- 2 piece Carrots
- 250 g Broccoli
- 3 tbsp Curry powder
- 400 ml Coconut milk
- 2 tbsp Oil
- 250 g White rice
- 500 ml Water
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package directions in parallel.
Step 2
Cut the chicken into cubes and the carrots into batons, cut the broccoli into florets.
Step 3
Sear the chicken in oil in the pot over medium-high heat for 5 minutes.
Step 4
Add the curry powder and stir quickly, cook for 1 minute.
Step 5
Pour in the coconut milk and add the carrots and broccoli. Simmer for 10 minutes.
Step 6
Season with salt and pepper. Serve the curry over white rice.
