Thai Curry with Oats and Fish
A rich and flavorful Asian curry with mackerel or tuna, oats for thickening, and whatever vegetables you have on hand. Exotic yet simple.

Ingredients
- 250 g Canned mackerel or tuna
- 80 g Oat flakes
- 2 tsp Curry powder
- 2 piece Carrots
- 2 stalks Celery stalks
- 200 ml Coconut milk
- 150 ml Water
- 1 tbsp Olive oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the carrots and celery into small dice.
Step 2
Heat the oil in a pot and add the curry powder.
Step 3
Add carrots and celery, sauté for 3 minutes.
Step 4
Pour in the coconut milk and water, bring to a boil.
Step 5
Add the oat flakes and stir.
Step 6
Simmer for 8 minutes until thickened.
Step 7
Drain the fish and add it to the curry, mix well.
Step 8
Cook for 2 minutes more, then season with salt and pepper to taste.
