Asian Red Curry with Lentils and Vegetables
A savory and spicy curry rich in flavor with curry paste, coconut milk, and fresh vegetables. Served over white rice or noodles.

Ingredients
- 200 g Red lentils
- 2 piece Carrots
- 300 g Potatoes
- 100 g Fresh spinach
- 600 ml Water
- 2 tbsp Oil
- 2 tbsp Red curry paste
- 200 ml Coconut milk
- 1 pinch Salt
Instructions
Step 1
Peel and cut the carrots and potatoes into small cubes.
Step 2
Sauté the curry paste in oil in a pan for 1 minute.
Step 3
Add the carrots and potatoes, stir well to coat with curry.
Step 4
Pour in the water and add the red lentils.
Step 5
Simmer for 12 minutes until the lentils and vegetables are tender.
Step 6
Add the coconut milk and spinach, cook for another 3 minutes.
Step 7
Season to taste and serve over rice or noodles.
