Quick Curry Chicken with Carrots and Oat Flakes
A delicious and lightly spiced curry with tender chicken, carrots, and oat flakes for thickness. Served over rice.

Ingredients
- 400 g Chicken thighs
- 200 g Carrots
- 200 g Rice
- 40 g Oat flakes
- 150 ml Sour cream
- 2 tbsp Oil
- 300 ml Water
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package directions.
Step 2
Cut the chicken thighs into pieces and dice the carrots.
Step 3
Heat the oil in a skillet and cook the chicken for 8 minutes.
Step 4
Add the carrots, curry powder, and water. Simmer for 8 minutes.
Step 5
Add the sour cream and oat flakes. Let thicken for 3 minutes.
Step 6
Season with salt and pepper. Serve over rice.
