Quick Cauliflower, Carrot, and Quinoa Curry
A flavorful and nutritious curry with crisp vegetables and quinoa. Inspired by Asian cuisine, ready in 30 minutes.

Ingredients
- 150 g Quinoa
- 300 g Cauliflower
- 200 g Carrots
- 300 ml Water
- 2 tbsp Olive oil
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
- 200 ml Coconut milk
Instructions
Step 1
Rinse the quinoa and cook in 300 ml of boiling water for 15 minutes.
Step 2
Meanwhile, cut the cauliflower into florets and the carrots into sticks.
Step 3
Sauté the vegetables in a skillet with olive oil for 5 minutes.
Step 4
Sprinkle with curry powder, stir, and add the coconut milk. Simmer for 10 minutes.
Step 5
Season with salt and pepper, and serve the curry over the cooked quinoa.
