Quick Vegetable and Ham Curry
An express Asian curry with carrots, broccoli, ham, and coconut milk for an indulgent touch.

Ingredients
- 250 g carrots
- 200 g broccoli
- 150 g ham
- 400 ml coconut milk
- 2 tbsp olive oil
- 2 tsp curry powder
- 200 ml water
- 1 pinch salt
- 1 pinch pepper
Instructions
Step 1
Cut the carrots into batons and the broccoli into florets.
Step 2
Cut the ham into cubes.
Step 3
Heat the oil in a skillet and toast the curry powder for 1 minute.
Step 4
Add the carrots and cook for 5 minutes.
Step 5
Add the broccoli, ham, coconut milk, and water.
Step 6
Simmer for 8 minutes. Season and serve.
