Light Apple and Vegetable Curry with Chicken
A fragrant and mild curry with apples, fresh vegetables, and chicken. A satisfying yet well-balanced dish inspired by Asian cuisine.

Ingredients
- 500 g Chicken
- 2 piece Apples
- 200 g Carrots
- 200 g Broccoli
- 200 g Potatoes
- 400 ml Coconut milk
- 2 tbsp Curry powder
- 1 piece Onion
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
- 250 ml Water
Instructions
Step 1
Cut the chicken into cubes. Mince the onion. Cut the apples into quarters, carrots into sticks, broccoli into florets, and potatoes into cubes.
Step 2
Heat the oil in a pot. Brown the chicken for 5 minutes over high heat until golden. Add the onion.
Step 3
Sprinkle with curry powder, stir for 1 minute to coat everything well.
Step 4
Add the potatoes, carrots, and broccoli. Pour in the coconut milk and water. Simmer for 15 minutes.
Step 5
Add the apples and cook for 5 more minutes. Season with salt and pepper to taste. Serve hot.
