Light Broccoli and Cauliflower Curry
A simple and flavorful Asian curry with pantry-staple vegetables. Serve over white rice or with bread. Delicious yet light.

Ingredients
- 250 g Broccoli
- 250 g Cauliflower
- 150 g Carrots
- 25 ml Olive oil
- 400 ml Water
- 15 g Curry powder
- 200 ml Coconut milk
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Cut all vegetables into uniform pieces.
Step 2
Heat the olive oil in a pot and sauté the carrots for 3 minutes.
Step 3
Add the curry powder and stir for 1 minute.
Step 4
Add the broccoli and cauliflower, stirring well.
Step 5
Pour in the water and coconut milk, bring to a boil.
Step 6
Simmer for 12 minutes until the vegetables are tender.
Step 7
Season with salt and pepper, and serve hot.
