Vegetarian Indian Curry with Tomato and Apples
An easy and fragrant curry made with tomato sauce, onions, apples, and spices. Served over white rice. A warming, aromatic dish.

Ingredients
- 400 ml Tomato sauce
- 2 piece Apples
- 2 piece Tomatoes
- 50 g Comté cheese
- 3 tbsp Olive oil
- 1 piece Onions
- 200 g White rice
- 2 tsp Curry powder
- 200 ml Coconut milk
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the white rice according to package instructions.
Step 2
Peel and finely mince the onions.
Step 3
Sauté the onions in olive oil for 3 minutes.
Step 4
Add the curry powder and cook until golden, about 1 minute.
Step 5
Pour in the tomato sauce and coconut milk, stir well.
Step 6
Peel, core, and cut the apples into cubes.
Step 7
Cut the tomatoes into dice and add them to the curry with the apples.
Step 8
Simmer covered for 15 minutes. Season with salt and pepper.
Step 9
Serve the curry over hot rice and garnish with grated Comté cheese.
