Indian Lentil and Spinach Curry (Palak Dal)
A flavorful Indian curry made with lentils, spinach, and vegetables. Served with rice or bread, it's a comforting classic.

Ingredients
- 200 g Red lentils
- 250 g Spinach
- 2 piece Carrots
- 250 g Potatoes
- 1 piece Onion
- 200 ml Crushed tomatoes
- 200 ml Coconut milk
- 3 tbsp Oil
- 2 tsp Curry powder
- 1 pinch Salt
Instructions
Step 1
Peel and dice the onion, carrots, and potatoes into small cubes.
Step 2
Sauté the onion in hot oil with the curry powder for 2 minutes.
Step 3
Add the carrots, potatoes, and lentils, stirring well to combine.
Step 4
Pour in the crushed tomatoes and coconut milk, bring to a boil.
Step 5
Simmer for 15 minutes until the vegetables are tender.
Step 6
Add the spinach and cook for 2 minutes, then season to taste.
