Indian Vegetable Curry with Rice
A simple authentic Indian curry with cauliflower, broccoli and a rich, savory sauce. Served with rice, it's a complete and satisfying meal.

Ingredients
- 300 g Cauliflower
- 300 g Broccoli
- 1 piece Onion
- 2 tsp Curry powder
- 0.5 tsp Turmeric
- 400 ml Coconut milk
- 200 ml Water
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
- 250 g White rice
Instructions
Step 1
Start cooking the rice according to package instructions.
Step 2
Dice the onion finely and cut the cauliflower and broccoli into small florets.
Step 3
Heat the oil in a pot and sauté the onion for 3 minutes.
Step 4
Add the curry powder and turmeric, stir for 1 minute to infuse the oil.
Step 5
Add the vegetables, stir for 2 minutes, then pour in the coconut milk and water.
Step 6
Cover and simmer for 20 minutes until the vegetables are tender.
Step 7
Season with salt and pepper, then serve the curry over hot rice.
