Indian Cauliflower and Broccoli Curry
A mild and flavorful curry with aromatic spices that won't leave you sweating. Served with rice, it's a complete and delicious meal.

Ingredients
- 350 g Cauliflower
- 350 g Broccoli
- 2 tbsp Oil
- 1 piece Onion
- 2 clove Garlic
- 2 tsp Curry powder
- 0.5 tsp Turmeric
- 200 ml Coconut milk
- 200 ml Vegetable broth or water
- 5 g Salt
- 2 g Pepper
Instructions
Step 1
Dice the onion and mince the garlic. Cut the vegetables into florets.
Step 2
Heat the oil in a pot and sauté the onion and garlic for 3 minutes.
Step 3
Add the curry powder and turmeric, stir for 1 minute to bloom the spices.
Step 4
Add the vegetables, coconut milk, and broth. Bring to a gentle simmer.
Step 5
Cover and simmer for 20 minutes until the vegetables are tender.
Step 6
Season with salt and pepper. Serve hot with rice.
