Quick Chicken, Carrot, and Broccoli Curry
A quick and flavorful Asian curry with tender chicken, carrots, and broccoli in a rich sauce. Serve over rice or with noodles.

Ingredients
- 350 g Chicken
- 150 g Carrots
- 200 g Broccoli
- 200 ml Coconut Milk
- 2 tbsp Red Curry Paste
- 2 tbsp Olive Oil
- 1 piece Onion
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cut the chicken into cubes, carrots into sticks, and broccoli into florets. Slice the onion.
Step 2
Heat the oil in a pan or pot and sauté the onion for 2 minutes.
Step 3
Add the chicken and brown for 5 minutes over medium-high heat.
Step 4
Stir in the curry paste, then pour in the coconut milk. Simmer for 3 minutes.
Step 5
Add the carrots and broccoli, cover partially, and cook for 8 minutes until the vegetables are tender.
Step 6
Season with salt and pepper to taste. Serve hot with rice or noodles.
