Tomato and Asparagus Curry
An easy Asian curry with simple ingredients: asparagus and tomatoes in a creamy curry sauce. Served with rice, it's a complete meal.

Ingredients
- 300 g Asparagus
- 250 g Tomato
- 15 g Curry Powder
- 200 ml Coconut Milk
- 20 ml Olive Oil
- 3 g Salt
- 2 g Pepper
- 200 g White Rice
Instructions
Step 1
Cook the rice in a saucepan according to package instructions.
Step 2
Cut the asparagus into pieces and dice the tomatoes.
Step 3
Toast the curry powder in a skillet with the olive oil for 1 minute.
Step 4
Add the asparagus, tomatoes, and coconut milk. Simmer for 15 minutes.
Step 5
Season to taste and serve over the rice.
