Curry Fried Rice with Vegetables

Ingredients
- 300 g Cooked rice
- 1 piece Red or yellow bell pepper
- 1 piece Onion
- 100 g Frozen peas
- 2 piece Eggs
- 2 tsp Curry powder
- 2 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Dice the onion and bell pepper into small pieces.
Step 2
Beat the eggs in a bowl with a pinch of salt.
Step 3
Heat the oil in a wok over high heat, pour in the beaten eggs and scramble quickly. Set aside.
Step 4
Add the onion and bell pepper to the wok and stir-fry for 2 minutes.
Step 5
Add the rice, curry powder, and frozen peas, stirring well over medium-high heat.
Step 6
Add the scrambled eggs back in, mix well, season with salt and pepper to taste, and serve hot.
