Quinoa Curry with Vegetables (Asian Fusion)
A light and delicious curry blending quinoa with vegetables and a rich curry sauce. A quick fusion recipe that everyone loves.

Ingredients
- 250 g Quinoa
- 250 g Carrots
- 300 g Broccoli
- 200 g Cauliflower
- 3 tbsp Olive oil
- 600 ml Water
- 400 ml Coconut milk
- 2 tbsp Curry paste
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa and cook it in 600ml of salted boiling water for 15 minutes until the water is absorbed.
Step 2
Meanwhile, cut the vegetables into even pieces.
Step 3
Heat the oil in a large pan and sauté the carrots for 3 minutes.
Step 4
Add the curry paste and stir well for 1 minute to develop its flavor.
Step 5
Add the broccoli and cauliflower, then pour in the coconut milk. Simmer for 8 minutes over medium heat.
Step 6
Stir in the cooked quinoa and mix well. Season with salt and pepper. Cook for 2 minutes.
Step 7
Serve hot in bowls.
