Quinoa Curry with Broccoli and Shrimp
A light and flavorful Asian dish combining quinoa with a generous curry sauce, shrimp, and broccoli. Ready in 30 minutes for a satisfying evening meal.
Ingredients
- 200 g Quinoa
- 300 g Shrimp
- 300 g Broccoli
- 400 ml Coconut milk
- 2 tsp Curry powder
- 500 ml Water
- 2 tbsp Olive oil
- 1 piece Onion
- 2 clove Garlic
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Rinse the quinoa under cold water. Pour it into a pot with 500 ml of salted water. Bring to a boil and simmer for 15 minutes.
Step 2
Meanwhile, finely chop the onion and garlic. Cut the broccoli into small florets.
Step 3
Heat the olive oil in a skillet and sauté the onion and garlic for 2-3 minutes until translucent.
Step 4
Add the curry powder, stir, and cook for 1 minute to release the flavors.
Step 5
Pour in the coconut milk, add the shrimp and broccoli. Simmer for 8-10 minutes.
Step 6
Season with salt and pepper. Serve the curry over the quinoa.
