Express Thai Chicken Curry
A flavorful and mildly spiced Thai curry prepared quickly in a wok with chicken and vegetables. Served over a bed of white rice for added indulgence.

Ingredients
- 400 g Chicken
- 150 g Carrots
- 2 tbsp Oil
- 200 g Potatoes
- 250 ml Water or broth
- 2 tbsp Red curry paste
- 200 ml Coconut milk
- 1 pinch Salt
Instructions
Step 1
Cut the chicken into small pieces and dice the potatoes.
Step 2
Heat the oil in the wok and sauté the chicken for 3 minutes.
Step 3
Add the curry paste and stir for 1 minute to release the flavors.
Step 4
Add the potatoes, carrots cut into batons, then the water and coconut milk.
Step 5
Simmer for 10 minutes until the vegetables are tender. Season to taste.
Step 6
Serve hot with white rice.
