Quick Thai Chicken Curry
A flavorful and easy Thai curry with chicken, broccoli, and potatoes. Satisfying yet simple, served with rice for an authentic Asian meal.

Ingredients
- 500 g Chicken
- 200 g Broccoli
- 2 piece Potato
- 1 piece Carrot
- 2 tbsp Oil
- 2 tbsp Red curry paste
- 400 ml Coconut milk
- 1 tsp Salt
- 200 g Rice
- 400 ml Water
Instructions
Step 1
Cook the rice according to package directions (about 20 minutes).
Step 2
Cut the chicken into cubes and chop the vegetables into chunks.
Step 3
Brown the chicken in hot oil in a pot or large skillet.
Step 4
Add the curry paste and stir for 1 minute, then pour in the coconut milk.
Step 5
Add the vegetables, season with salt, and simmer for 12 minutes until fully cooked.
Step 6
Serve the hot curry over the cooked rice.
