Quick Coconut Chicken Curry
A flavorful Asian-inspired curry with tender chicken, carrots, and a silky coconut sauce. Serve with toasted bread for dipping.

Ingredients
- 350 g Chicken
- 200 g Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 1 piece Onion
- 2 tbsp Oil
- 4 g Salt
- 6 slice Bread
Instructions
Step 1
Cut the chicken into cubes and slice the onion thinly.
Step 2
Cut the carrots into batons.
Step 3
Heat the oil in a pan and sauté the onion and curry paste for 1 minute.
Step 4
Add the chicken and cook for 5 minutes over medium-high heat.
Step 5
Pour in the coconut milk and add the carrots.
Step 6
Simmer for 10 minutes until the chicken and carrots are cooked through.
Step 7
Toast the bread and serve with the curry.
