Chicken Curry with Rice
A simple Indian chicken curry with vegetables and coconut cream. Flavorful and mildly spiced, served over white rice.

Ingredients
- 200 g Rice
- 350 g Chicken thighs
- 150 g Carrots
- 120 g Leeks
- 100 ml Sour cream
- 2 tbsp Oil
- 1 piece Onion
- 2 tsp Curry powder
- 1 pinch Salt
- 1 pinch Pepper
- 200 ml Water
Instructions
Step 1
Cook the rice in salted boiling water according to package directions. Keep warm.
Step 2
Cut the chicken into cubes and the vegetables into pieces. Sauté the chicken in a pan with oil until golden.
Step 3
Add the onion, carrots and leeks. Cook for 4-5 minutes, stirring.
Step 4
Sprinkle the curry powder and mix well. Add 200 ml water and simmer for 8 minutes.
Step 5
Stir in the sour cream and cook for 2 minutes. Season with salt and pepper. Serve over the rice.
