Quick Chicken and Potato Curry
A simple and flavorful curry featuring tender chicken, potatoes and creamy coconut milk. Lightly spiced and wonderfully comforting.
Ingredients
- 500 g chicken
- 400 g potato
- 200 g carrot
- 400 ml coconut milk
- 1 piece onion
- 2 clove garlic
- 1 tbsp curry powder
- 2 tbsp olive oil
- 1 pinch salt
- 1 pinch pepper
- 250 g rice
Instructions
Step 1
Cut the chicken into cubes. Peel and cut the potatoes and carrots into chunks. Chop the onion and garlic.
Step 2
Sauté the onion and garlic in a pot or wok with the oil for 2 minutes.
Step 3
Add the chicken pieces and brown them for 5 minutes.
Step 4
Sprinkle with curry powder, stir well and cook for 1 minute.
Step 5
Add the potatoes, carrots and coconut milk. Season with salt and pepper.
Step 6
Cover and simmer for 15 minutes until the chicken and vegetables are cooked through.
Step 7
Meanwhile, cook the rice according to package directions.
Step 8
Serve the curry over a bed of white rice.
