Thai-Style Chicken and Apple Curry
A simplified Thai curry with tender chicken, apples, and carrots in a coconut-curry sauce, served over white rice.

Ingredients
- 500 g Chicken
- 2 piece Apple
- 2 piece Carrot
- 400 ml Coconut milk
- 2 tbsp Red curry paste
- 250 g White rice
- 1 tbsp Oil
- 1 pinch Salt
- 1 pinch Pepper
Instructions
Step 1
Cook the rice according to package instructions. Cut the chicken into pieces, julienne the carrots, and dice the apples.
Step 2
Sauté the chicken in oil in the pot for 5 minutes until golden.
Step 3
Add the curry paste, mix well for 1 minute.
Step 4
Pour in the coconut milk, add carrots and apples, simmer for 12 minutes until fully cooked.
Step 5
Season with salt and pepper, serve over rice.
